CELEBRATING THE FOURTH!

The Fourth Of July 2012 began a midnight with a Firecracker Moon. I had gone outside to see who was shoot firecrackers in the right of way behind the house. Whoever they were, they fled at my arrival. When I turned to go in the house I saw the moon beaming through the tall spruce tree.

Then I went in and went to bed to dream of Tom, John, Ben, Richard Henry, Caesar and all the other patriots who made our great country possible.

In case you’ve ever wondered, this is the small meeting room in Independence Hall where the 2nd Continental Congress met on a hot July day to approve their Declaration Of Independence. Like all congresses, it went through a lot of bickering, badgering, shouting and walking out before the finally agreed to agree. Then they began editing Tom Jefferson’s work down to a fourth of what he had written. They also set the pattern for many congresses to follow. While they approved the declaration on July 4, it wasn’t signed until August 2.

For anyone visiting my home today, I created a collection of patriotic foods. For lunch, it was Tuna Salad Torpedos.

It was my original tuna salad (canned tuna, chopped celery, bell pepper and onion, sweet pickle relish, Duke’s Mayo and shredded jack cheese served on a toasted hot dog bun) accompanied by a frosty Red Rock Cola … Atlanta’s favorite since 1885.

For dinner I made  my International-American Goulash … ground round, onions, celery, bell peppers, kidney beans, pinto beans, tomato salsa, and mini-cheese ravioli simmered to perfection and topped with shredded cheddar jack cheese.

On the side I had plenty of fresh baking powder biscuits.

For a refreshing dessert I served individual cups of frozen yogurt.

Orange cream is my favorite … just like a Dreamsicle in a cup.

    Glad you had a relatively calm Fourth. Except for the idiots with fireworks.
